Low Carb Cheesecake With Strawberry Sauce

With Splenda and Philadelphia Cream Cheese, you have a cheesecake with 6.7 grams of carbs per serving in eight slices total.  If you are losing weight on a low carb diet like me and you bake for non-dieters like me it’s good to have something quick and easy to curb the sugar cravings.

Low Carb Sugar Free Cheesecake With Strawberry Sauce

Ingredients:

3         Eight Ounce Packages of Philadelphia Cream Cheese

3         Large Eggs

1 1/3 Cups Splenda

1          Tablespoon Vanilla Extract

1          Teaspoon Almond Extract

1/2      Cup Sour Cream* (You can add this for creamy texture or leave out)

Preparation:

Preheat oven to 350 degrees.  Beat cream cheese bars until creamy.  Add the rest of the ingredients.  Beat.  Pour into pie dish sprayed with cooking spray and bake for 35 minutes.

Strawberry Sauce

One small container strawberries.  Wash and remove tops.  Use food processor or blender to puree.  Add 1/3 cup Splenda or to taste.

    1. It’s also sugar free and it’s so easy. The best deal on Splenda is at Sam’s. If you are going to cut out sugar then the larger bag is the way to go. The girls are so much fun, but the weather is keeping them inside and they are going bonkers. They love to hear me sing. Imagine that! They stick their necks out and look all around to see where the obnoxious sound is coming from. LOL

  2. I’ve been experimenting with xylitol in place of sugar. It’s more expensive than Splenda, but a natural substitute. I’ll try your low carb cheesecake with it. Looks yummy!

    1. Please let me know how that turns out. Whenever I use Splenda I get the sneaking suspicion that I am doing something wrong and that it may be harmful, but it seems to work the best. I live in a rural area and can’t find xylitol at Walmart, but I travel to Houston or College Station every month or so to get supplies.
