Come Early, Proverbs 8:17

Proverbs 8:17 says, “I love them that love Me, and those that seek  Me shall find me early.”   This was the message embroidered on canvas and given to me on Christmas Eve by neighbor and Sister In Christ, Mae Starr.    Her given name is something entirely different.  Mae Starr of  Texas  is her inner talent name that she uses for art and especially embroidery.  She drew this and then embroidered it.  These are the kind of gifts that mean so much to me.

Come Early Canvas

How perfect was the timing because as you know my sister did leave early and she did seek Him and I know that she found Him.  What a comfort to know that!   Thank you, Mae, for reminding me of that and giving such a beautiful and comforting gift.

In Loving Memory Of My Sister, Sandra Lee Wilson

When you were born in the south in the 50’s or 60’s, at least in our family,  you were given one long name which automatically included your middle name.   This was the case when Fern Marie gave birth to Sandra Lee.

From the beginning she was a November child full of gratitude and love.  She started her career at age eighteen and before twenty-five  was managing Superior Title in Clear Lake, Texas.  She always looked at every employee as someone with a life and family beyond the door of the office.  Each file or title that was examined was important to her because that meant a family or a life that counted on her for their future success.  She was in the title industry for forty years.  I don’t recall her ever having a resume.  The name Sandra Lee Wilson was enough.

Her personal life was filled with family and friends.  She owned her own ski boat and took it out to Clear Lake every weekend.  Years later, she admitted that she couldn’t really back that boat up but she knew someone would help her when she got there.

Then the babies came and from that moment on she gave up herself and it was about her children.  That brings me to you, Natalie Nicole,  an August baby, back to school and down to business.  Your mom worked until the day you were born and did she ever crave mexican food and guacamole.  You are the serious business side of your mom.  We are so proud of the teacher and motivator that you are.

Matthew David, the December, “let’s celebrate Jesus’ birthday”,  child which was your mom’s favorite time of year.  You, Matt, are the fun-loving, compassionate and joyful side of your mom.  We are so proud of the husband and father you have become.  Both of you are the sum total of your mother; full of goodness and light.

John Brandon and Crystal Suzanne, you completed Natalie and Matthew.  Sandra felt her job was complete when her children married you.

Allen,  I just realized I have never known your middle name so I am calling you what my sister named you – Allen Soldier.  We laugh because Sandra Lee could give us our orders and we carried them out.  It may be tear out the back yard and re-landscape in a day or just a week ago shopping for the  grand babies.  Like you said, she kept you going and gave you a purpose.  Well, now there are new marching orders.  You are a wonderful father, brother, uncle and most of all a grandfather which is most important to Sandra.  The last few years have been difficult; but,  you kept it all together and I thank you for loving my sister.

Payton Kaylee and Carter Allen, your grandma loved you beyond words.  We all know that the first grandchild has the privilege of naming the grandparents.  When Sandra was keeping Payton, there was a period of about two weeks that several bananas were peeled and not eaten.  Payton kept asking for a “nana” and not eating them.  Finally, Sandra realized that she was Nana.  Recently, I have been informed that Payton changed her mind and is saying grandma now.

With all her heart Sandra wanted to bless you, her grand babies, and so I have these verses for you from your grandma:

The Lord Bless thee and keep thee.  The Lord make His face shine upon thee and be gracious unto thee.

The Lord lift up His countenance upon thee and give thee peace. (Numbers 6:24-26)

Looking back, Sandra’s life story was her family especially her grandchildren.  There was plenty of love and laughter and friends along the way.  Her favorite song was “I Hope You Dance”.  If it came on the radio I had to listen and I believe now she would give us our marching orders and she would hope that we dance…

Love to you, Sandra Lee.  I know you know the Lord Jesus and must be dancing for joy right now.

More Christmas Carols

Elementary school was where I acquired my knowledge of Christmas Carols from the music teacher, Mrs. Shirley Wiggins, who was graceful, elegant and had a sixth sense for kids who needed her.  I was one of those kids and she allowed me to perform in her choir of which there were tryouts.  It took two or three tries for me and I know she helped me along.  In her wisdom, she didn’t just choose the popular, well dressed or smart kids.  She chose the under dogs.  I love her for that and remember her to this day.

Immense talent, vision and patience is an understatement to describe Mrs. Wiggins.   Somehow she could take a band of rag tag elementary kids, a piano, a cafegymatorium (that’s a cafeteria used as gym turned into a theatrical emporium) and shape it into a theatrical production with costumes, music and a musical score.  We had lines that would render a present day elementary schooler dumbfounded.  She demanded the best and we willingly gave it.   Choir we were not.  According to her, we were the Durkee Performing Chorus complete with initialed robes in green and white.  Perform we did, in shopping malls and nursing homes,  all across Houston.  That would never happen today, and I am so grateful it happened to me.  Today, Mrs. Wiggins would not tolerate the new tolerance that is slowly eradicating songs that give the true meaning of Christmas.  Wherever you are Mrs. Wiggins,  it is to your credit that these songs are engraved on my heart and brain and I sing them now.

Faux Crab Cakes

Most days I cook at least two meals, if not three, to satisfy my hungry household.  Sometimes I forget to thaw something out overnight and find these croquettes or as I have termed them faux crab cakes to fit the bill.  Since we moved here my cooking has become very simple because I simply can’t find the ingredients at the local stores.  Plus, it saves money and time.  Life is easier without worrying about extra ingredients.    To that end, this is what we had for lunch:

Faux Crab Cakes, Tossed Greens and Broccoli

Faux Crab Cakes

Ingredients:

1        Pound Canned Chicken Breast, Tuna or Salmon

1        Tablespoon Hellman’s Mayonnaise

2        Eggs

1         Tablespoon Baking Powder

1         Tablespoon Worcestershire Sauce

1 1/2 Teaspoons Old Bay or Slap Yo Mama or Tony Cachere’s Seasoning

2         Tablespoons Olive Oil or Canola Oil

Preparation:

Mix all ingredients together.  Heat oil in frying pan.  Form small patties, place in skillet, cook 3 to 4 minutes per side.  Place on paper towel lined plate before serving. Enhance your recipe by adding diced green onions and bell pepper.  If I have them I use them.  Of course, if you can find it,  real crab can be used.  Usually, I mix chicken with salmon or tuna.

Simple Dipping Sauce:

4     Tablespoons Hellman’s Mayonnaise

2      Teaspoons Prepared Horseradish

Mix together and serve.  Keep refrigerated.  The dipping sauce can be varied with a teaspoon of lemon juice or replace mayonnaise with ketchup.

Nat Notes:  This is a low carb version which would be good for diabetes.  However, if you want the full fat,  crush ten Ritz Crackers and leave out the baking powder.  Make sure your oil is hot so they won’t stick and you may need to add more as you cook if the oil is absorbed.  Small patties will hold together well in the skillet.

Although I have the fabric, I haven’t had the drapery hung because my house is new and we needed so much to be done outside to get our farm up and running.  I still wanted to decorate for Christmas and decided to just use the old.  Now I can’t seem to get “Deck the Halls” out of my head, fa la la.  I seem to have been decking the halls.   Let me know what you think.  Hopefully, you will get some great ideas  for your home.
