Fried Shrimp

 

Fried Shrimp is one of my specialty dishes that I cook on special occasions.  It’s one of those recipes that is not measured by cups and teaspoons, but by touch and specific name brand ingredients to insure that the taste is always a high quality.  Make sure to use the the name brands because others will not provide the same quality taste.

Ingredients:

2lbs  Large Deveined  Shrimp

King Arthur Unbleached All Purpose Flour

LouAna Canola Cooking Oil

Lawry’s Garlic Salt with Parsley

Three Large Eggs

 

Preparation:

Peel, rinse and then butterfly shrimp by cutting a slit a little deeper on the back side of the shrimp allowing the shrimp to open up a little more.  Use a large heavy duty skillet.  Fill skillet  with LouAna Cooking Oil (enough to cover shrimp) that will fry consistently while maintaining the heat.  Turn burner on medium to start heating cooking oil.  Place about two cups of flour in a dish, salt liberally with the garlic salt and mix together.  Place shrimp in a large bowl and break eggs over shrimp and stir to cover completely.   Dredge  shrimp in flour.  Test oil by dropping a splash of flour into skillet if it rises then oil is ready.  Drop shrimp into oil,  careful to not place too many in skillet.  Allow shrimp to turn a light golden color like the picture turning after two minutes to other side.  Shrimp will cook very fast so watch carefully.  Enjoy!

Cleaning Cook Tops

Here is a dirty cook top cleaning tip…

 

1.   Spray with Scrubbing Bubbles bathroom cleaner and let sit.  (Yep, bathroom cleaner, not the actual cook top cleaner because it doesn’t work without scrubbing and scrubbing.  The bathroom cleaner does what it says it will do; hence, Scrubbing Bubbles.

 

 

2.  Wipe down with a damp cloth a couple of times and that’s it.

 

Sugar Free Strawberry Trifle

 

 

Ingredients:

Angel Food Cake Mix

Crushed Pineapple (20 Ounce Can)

Two Cups Sliced Strawberries

One Half Cup Sugar Free Strawberry Preserves

Vanilla Sugar Free Low Fat Yogurt (8 Ounces)

1/4 Cup Skim Milk

Cheesecake Sugar Free Instant Pudding (1 Ounce)

Sugar Free Light Cool Whip

Preparation:

Preheat oven to 350 degrees.  Prepare Angel Food Cake by adding crushed pineapple and stirring until well blended.  Spray 9 X 13 glass pan with cooking spray, add cake and cook for 30 to 35 minutes.  Cool Cake and cut up or tear in to bite size pieces.   Wash and slice strawberries and gently stir in strawberry preserves.

Combine yogurt and milk with whisk.  Add pudding mix stirring until mixture thickens.  Stir in two cups of cool whip.

Assemble trifle with cake layer, strawberry mixture, and pudding mixture.

Preparation:

Avocado and Shrimp Salad – Low Carb

 

 

 

Avocado and Shrimp Salad

If you notice, I rarely get to plate anything.  I can barely get the dish to the table before it’s gone.

 

Ingredients:

1 lb medium cooked shrimp, peeled and deveined and chopped
1 medium tomato, diced
1 hass avocado, diced
1 jalapeno, seeds removed, diced fine
1/4 cup chopped red onion
Juice of 2 limes
1 Tbsp olive oil
1 Tbsp chopped cilantro
sea salt and fresh pepper

Directions:


In a small bowl combine red onion, lime juice, olive oil, pinch of salt and pepper. Let them marinate at least 5 minutes to mellow the flavor of the onion. In a large bowl combine chopped shrimp, avocado, tomato, jalapeño. Combine all the ingredients together, add cilantro and gently toss. Adjust salt and pepper to taste.  Each Serving around  3 carbs.  Thank you to Faithfulness Farm for this recipe.

Instead of Chips or Crackers which are carb laden you can make parmesan crips.  Use package parmesan and parchment paper. Pile cheese in neat little circles about a 1/2 inch apart on the paper.   Heat oven to 400 degrees and bake for five minutes.   Here is what they look like before they go in the oven:

 

Coca Cola Brisket

Ingredients:

Brisket

Coke 10 or 12 ounces

Heinz Chili Sauce

Onion Soup Mix

Directions:

1.  Choose a brisket by bending in half in the grocery store.  I was told this secret by an old time barbeque man who makes delicious, melt in your mouth brisket with the greatest of ease.  If the brisket folds in half easily, without struggle, you have a good one.

2.  Spray roasting pan with cooking spray.  Place brisket fat side up and pour chili sauce then coke on top.  Sprinkle onion soup mix on top.  Cover with foil and bake at 350 degrees for 3 to 3 1/2 hours.   Let sit for 1o minutes then slice on the diagonal.  Pour juices on top in serving dish.  Gets better as it sits.
